Banana Cake with Savory Coconut Sauce

  • 1 cup of granulated sugar
  • 4 tablespoons of butter (room temperature)
  • 3 ripe bananas, mashed
  • 1 teaspoon of baking soda
  • 2 eggs
  • ¼ cup of fresh orange juice
  • ½ cup of all-purpose flour
  • Pinch of salt
  • Sliced mint or fresh min for garnish

Preparation: Heat the oven to 350 degrees. Spread butter in your baking pan. You can align parchment paper, for easy cake extraction.

In a dry mixing bowl, mix sugar and butter then mix at a low speed. Gradually add mashed bananas, orange juice, and eggs until thoroughly mixed.

In another clean mixing bowl; add flour, salt, and baking soda. Gradually add the sugar and butter mixture while mixing at a low speed. Use a spatula to scrape down the sides of the bowl – where the mixer attachment does not reach. Bake for about one hour. Check the cake for readiness on the glass window (try not to open the oven door, it releases heat and delays the cake bake time). After about an hour, check if the cake is baked with a toothpick.

If the toothpick comes out clean, congratulations! Turn the cake over to the cooling rake and allow the cake to cool for at least ten minutes before proceeding with the decorations and serving.

Spread the coconut mixture on the cake. Decorate the cake with sprinkles and cherries.

The mixture makes 6 to 8 servings.

Savoury Coconut Sauce

  • A cup of unsweetened coconut milk
  • Liquefy a teaspoon of cornstarch in about a tablespoon of water
  • Pinch of salt
  • A tablespoon of granulated sugar (if you do not have use caster sugar)

Heat the coconut milk in a saucepan at low heat – do not overcook. Gradually add salt and sugar. Stir with a spatula to dissolve. Boil water and add cornstarch.

Mix the coconut milk sauce with cornstarch sauce. You can keep the mixture in a refrigerator and use it for a later date.
